- Heat oil in a pan. Sauté onion until soft. Add the rice and toast them for about 2 mins. Add the courgette and then the wine, let it evaporate.
- Now add about half the stock, just enough to cover the rice and stir frequently. Add more stock as necessary as you stir, continue until rice is nearly cooked, about 20 mins. Meanwhile add a small amount of butter to a separate pan and cook the scallops on medium for about 3-4 minutes, until they get a nice colour.
- Then as rice is nearly cooked, add the scallops and the rest of the butter, stir for 1-2 minutes until creamy. Enjoy.
